About the Classes

Cooking classes at Casa Pelican are casual, relaxed and as 'hands-on' as you feel comfortable with. Limited to a maximum of 6 students, there is plenty of time to ask questions, discuss methodologies and learn about the history of Louisiana's unique cuisine.

All classes commence at 2pm and last  between 3 and 4 hours depending on the complexity of the recipes. Red and white wine and iced tea are offered throughout the class and during the formal sit-down meal at the conclusion of each class.

Cajun and Creole Basics  $125

Schedule: every Wednesday and Friday
Find our what makes America's most popular cuisine so delicious. In this class you'll learn all the tricks and techniques from preparing the perfect roux to finishing each dish with just the right amount of spice. Recipes include Gumbo, Jambalaya, Blackened Gulf Fish and Bread Pudding.

Louisiana Seafood  $150

​Schedule: Seasonally and By Request
This primer of local seafood will give you a full appreciation for why Louisiana is famous for it. Participants will prepare Shrimp Creole, Crawfish Etouffee and Oysters Rockefeller from scratch, starting with shucking some fresh oysters.

New Orleans Jazz Brunch  $125

Nowhere is Brunch a bigger event than in New Orleans! Participants of this course will learn how to host a perfect one at home. Recipes include Grillades and Grits, Fresh Beignets, Pain Perdue and the cities favorite Brunch Cocktails.
